🦐 Air Fryer Shrimp and Vegetables

🧂 Ingredients:

For the Shrimp:

  • 1 lb (450g) raw shrimp, peeled and deveined

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • ½ tsp smoked paprika (optional)

  • ½ tsp onion powder

  • ¼ tsp crushed red pepper flakes (optional)

  • Salt and pepper to taste

  • Juice of ½ lemon (optional)

For the Vegetables:

  • 1 zucchini, sliced into half-moons

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 small red onion, sliced

  • 1 cup broccoli florets

  • 1 tbsp olive oil

  • ½ tsp Italian seasoning or dried oregano

  • Salt and pepper to taste


🍳 Instructions:

1. Prep Shrimp and Veggies:

  • In a bowl, toss shrimp with olive oil, garlic powder, paprika, onion powder, red pepper flakes, salt, and pepper. Set aside to marinate while prepping the vegetables.

  • In a separate bowl, toss all the vegetables with olive oil, Italian seasoning, salt, and pepper.

2. Preheat Air Fryer:

  • Preheat your air fryer to 375°F (190°C) for 3–5 minutes.

3. Cook Vegetables First:

  • Add vegetables to the air fryer basket in a single layer (work in batches if needed).

  • Cook at 375°F (190°C) for 10–12 minutes, shaking the basket halfway through, until tender and slightly charred.

4. Add Shrimp:

  • Once veggies are done, add the shrimp on top of the vegetables or cook them separately.

  • Air fry at 375°F (190°C) for 5–7 minutes, or until the shrimp are pink and opaque. Do not overcook.

5. Serve:

  • Drizzle lemon juice over shrimp and veggies before serving, if desired.

  • Serve on its own, over rice, quinoa, or noodles.


📝 Tips:

  • Frozen shrimp? Thaw before marinating.

  • Extra flavor: Add a spoon of pesto, soy sauce, or teriyaki glaze after cooking.

  • Spicy kick: Add sriracha or cayenne to the shrimp marinade.
