  • Ingredients

    • 1 cup cooked and cooled rice (white or jasmine)
    • 2 large eggs
    • ½ cup frozen peas
    • 2 tsp light soy sauce
    • Low-calorie cooking spray
    • Salt and pepper, to taste
    • Instructions

      Step 1: Prepare the Rice
      1. Cook rice in advance (around 4pm is perfect) and allow it to fully cool. Cold rice gives that classic fried rice texture.
      Step 2: Cook the Eggs and Peas
      1. Spray a non-stick frying pan or air fryer-safe pan with low-calorie cooking spray.
      2. Crack the eggs into the pan and scramble them with the peas until just cooked.
      Step 3: Add Rice and Soy
      1. Add the cold rice to the pan and mix well with the eggs and peas.
      2. Stir in soy sauce, season with salt and pepper, and cook until everything is heated through and slightly crisped.
      Optional Air Fryer Finish
      1. Transfer the mixed rice to an air fryer-safe dish and air fry at 200°C (392°F) for 3–4 minutes to crisp the edges for a takeaway-style finish.
