Ingredients
- 1 cup cooked and cooled rice (white or jasmine)
- 2 large eggs
- ½ cup frozen peas
- 2 tsp light soy sauce
- Low-calorie cooking spray
- Salt and pepper, to taste

Instructions
Step 1: Prepare the Rice
- Cook rice in advance (around 4pm is perfect) and allow it to fully cool. Cold rice gives that classic fried rice texture.
Step 2: Cook the Eggs and Peas
- Spray a non-stick frying pan or air fryer-safe pan with low-calorie cooking spray.
- Crack the eggs into the pan and scramble them with the peas until just cooked.
Step 3: Add Rice and Soy
- Add the cold rice to the pan and mix well with the eggs and peas.
- Stir in soy sauce, season with salt and pepper, and cook until everything is heated through and slightly crisped.
Optional Air Fryer Finish
- Transfer the mixed rice to an air fryer-safe dish and air fry at 200°C (392°F) for 3–4 minutes to crisp the edges for a takeaway-style finish.
