Ingredients
- 500g lean minced beef (5% fat or less)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp chili powder (adjust to taste)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup enchilada sauce (or spicy salsa)
- 4 small flour or corn tortillas
- 1/2 cup fat-free natural yogurt or quark (optional layer)
- 1 cup reduced-fat shredded cheese (cheddar or mozzarella)
- Fresh coriander, for garnish
- Low-calorie cooking spray

Instructions
Step 1: Cook the Filling
- Spray a pan with low-calorie spray and cook onion and garlic over medium heat until soft.
- Add minced beef and cook until browned. Drain excess fat if needed.
- Stir in cumin, paprika, chili powder, salt, pepper, and enchilada sauce. Simmer for 5 minutes.
Step 2: Assemble the Lasagna
- Cut tortillas to fit a small air fryer-safe dish.
- Layer: start with a tortilla, then spoon on meat sauce, a little yogurt (if using), and cheese. Repeat until all ingredients are used, ending with cheese on top.
Step 3: Air Fry
- Preheat air fryer to 180°C (356°F).
- Place the dish in the air fryer basket and cook for 18–20 minutes, or until golden and bubbly on top.
Step 4: Serve
- Let rest for 5 minutes, then garnish with chopped coriander and serve with a side salad or extra yogurt.
