Asparagus Stuffed Chicken Breast

Ingredients

  • 4 boneless, skinless chicken breasts

  • 12 asparagus spears, trimmed

  • 1 cup mozzarella cheese, shredded (or provolone/cheddar)

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • Salt and pepper, to taste

  • 2 tablespoons olive oil

  • Fresh parsley, chopped (for garnish)

Step 1: Prep the Chicken

  1. Preheat your oven to 375°F (190°C).

  2. Place the chicken breasts on a cutting board. Using a sharp knife, carefully cut a pocket lengthwise into each breast (don’t cut all the way through).

Step 2: Season

  • Rub the chicken inside and out with olive oil, garlic powder, paprika, salt, and pepper.

Step 3: Stuff the Chicken

  1. Place 3 asparagus spears inside each pocket.

  2. Add a generous amount of mozzarella cheese.

  3. Secure with toothpicks to hold the stuffing in place.

Step 4: Sear for Flavor

  1. Heat a large oven-safe skillet over medium-high heat with a drizzle of olive oil.

  2. Sear chicken breasts for 2–3 minutes per side, until golden brown.

Step 5: Bake

  • Transfer the skillet to the oven and bake for 20–25 minutes, until the chicken reaches an internal temperature of 165°F (74°C).

Step 6: Garnish & Serve

  • Sprinkle with fresh parsley and serve hot.
