Mediterranean Spinach and Feta Crisps

Ingredients (Yields 12–15 Crisps)

  • 1 cup fresh spinach, washed and chopped

  • 1/2 cup crumbled feta cheese

  • 1/4 cup all-purpose flour

  • 1/4 cup grated Parmesan cheese

  • 2 large eggs, beaten

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon dried oregano

  • Salt and pepper, to taste

  • Olive oil spray

1. Prepare the spinach

  • Wash, dry, and finely chop the spinach.

  • Pat dry with a paper towel to remove extra moisture.

2. Mix the batter

  • In a medium bowl, combine chopped spinach, feta, flour, Parmesan, garlic powder, oregano, salt, and pepper.

  • Add the beaten eggs and stir until everything is well combined into a thick mixture.

3. Shape the crisps

  • Scoop about 1 tablespoon of the mixture at a time and flatten into small patties (like mini fritters).

  • Place them on a parchment-lined baking sheet or plate.

4. Cook

You have two options:

Oven Method (healthier & crispier):

  • Preheat oven to 400°F (200°C).

  • Place the patties on a lined baking tray, spray lightly with olive oil, and bake for 10–12 minutes, flipping halfway through, until golden brown.

Pan-Fry Method (quicker):

  • Heat a skillet with a light spray of olive oil over medium heat.

  • Cook patties for 2–3 minutes per side, until crispy and golden.

5. Serve

  • Enjoy warm with your favorite dip: tzatziki, ranch, or hummus work wonderfully.


🌟 Tips & Variations

  • Add herbs: Fresh parsley or dill will make them even more Mediterranean.

  • Make them spicy: Add a pinch of red chili flakes.

  • Gluten-free: Use almond flour or chickpea flour instead of all-purpose flour.

  • Meal prep: These freeze well! Cook, cool, then freeze in a bag. Reheat in the oven or air fryer for a quick snack.
