Mediterranean Spinach and Feta Crisps
Ingredients (Yields 12–15 Crisps)

1 cup fresh spinach, washed and chopped

1/2 cup crumbled feta cheese

1/4 cup all-purpose flour

1/4 cup grated Parmesan cheese

2 large eggs, beaten

1/4 teaspoon garlic powder

1/4 teaspoon dried oregano

Salt and pepper, to taste

1. Prepare the spinach

Wash, dry, and finely chop the spinach.

Pat dry with a paper towel to remove extra moisture.
2. Mix the batter

In a medium bowl, combine chopped spinach, feta, flour, Parmesan, garlic powder, oregano, salt, and pepper.

Add the beaten eggs and stir until everything is well combined into a thick mixture.
3. Shape the crisps

Scoop about 1 tablespoon of the mixture at a time and flatten into small patties (like mini fritters).

Place them on a parchment-lined baking sheet or plate.
4. Cook
You have two options:
Oven Method (healthier & crispier):

Preheat oven to 400°F (200°C).

Place the patties on a lined baking tray, spray lightly with olive oil, and bake for 10–12 minutes, flipping halfway through, until golden brown.
Pan-Fry Method (quicker):

Heat a skillet with a light spray of olive oil over medium heat.

Cook patties for 2–3 minutes per side, until crispy and golden.
5. Serve

Enjoy warm with your favorite dip: tzatziki, ranch, or hummus work wonderfully.
