Rustic No Knead Rosemary Garlic Bread

This rustic artisan-style bread is baked to golden perfection in a Dutch oven (or heavy oven-safe pot). With minimal effort, you’ll get a bakery-style loaf that’s crunchy on the outside and tender inside — flavored with garlic and rosemary for a Mediterranean flair.
🛒 Ingredients (1 Loaf)
-
3 cups (360 g) all-purpose flour (or bread flour)
-
1 ½ tsp salt
-
½ tsp instant yeast
-
1 ½ cups (360 ml) warm water
-
2–3 cloves garlic, minced (or roasted for a sweeter flavor)
-
1 ½ tbsp fresh rosemary, chopped (or 2 tsp dried rosemary)
-
Olive oil (for brushing, optional)
👩🍳 Instructions
1. Mix the Dough
-
In a large mixing bowl, combine flour, salt, and instant yeast.
-
Stir in minced garlic and chopped rosemary.
-
Add warm water and mix with a wooden spoon until you have a sticky dough. (It will look shaggy — that’s perfect!)
-
Cover the bowl with plastic wrap or a clean towel and let it rest at room temperature for 12–18 hours.
2. Shape the Dough
-
After the resting time, the dough will be bubbly and sticky.
-
Lightly flour a surface and your hands, then gently shape the dough into a ball.
-
Place on a piece of parchment paper, cover loosely, and let rest for 30–40 minutes.
3. Preheat the Oven
-
While the dough rests, preheat your oven to 450°F (230°C).
-
Place a Dutch oven (or heavy pot with a lid) inside to heat for at least 30 minutes.
4. Bake the Bread
-
Carefully remove the hot Dutch oven from the oven.
-
Lift the dough (on its parchment paper) and place it inside the pot.
-
Cover with lid and bake for 30 minutes.
-
Remove the lid and bake for another 10–15 minutes, until golden brown and crusty.
5. Cool & Serve
-
Remove bread from pot and let it cool on a wire rack for at least 20 minutes before slicing.
-
Brush lightly with olive oil if desired, and sprinkle extra rosemary on top for a finishing touch.
🌟 Tips & Variations
-
Roasted Garlic Twist → Roast a whole head of garlic, squeeze out the cloves, and mix into the dough for a milder, sweeter garlic flavor.
-
Cheesy Upgrade → Add ½ cup shredded Parmesan or mozzarella into the dough for extra richness.
-
Herb Swap → Try thyme, oregano, or a mix of Italian herbs instead of rosemary.
-
No Dutch Oven? → Place dough on a baking sheet, cover with an oven-safe bowl for the first half of baking, then uncover to crisp.
