Rustic No Knead Rosemary Garlic Bread

This rustic artisan-style bread is baked to golden perfection in a Dutch oven (or heavy oven-safe pot). With minimal effort, you’ll get a bakery-style loaf that’s crunchy on the outside and tender inside — flavored with garlic and rosemary for a Mediterranean flair.


🛒 Ingredients (1 Loaf)

  • 3 cups (360 g) all-purpose flour (or bread flour)

  • 1 ½ tsp salt

  • ½ tsp instant yeast

  • 1 ½ cups (360 ml) warm water

  • 2–3 cloves garlic, minced (or roasted for a sweeter flavor)

  • 1 ½ tbsp fresh rosemary, chopped (or 2 tsp dried rosemary)

  • Olive oil (for brushing, optional)

1. Mix the Dough

  • In a large mixing bowl, combine flour, salt, and instant yeast.

  • Stir in minced garlic and chopped rosemary.

  • Add warm water and mix with a wooden spoon until you have a sticky dough. (It will look shaggy — that’s perfect!)

  • Cover the bowl with plastic wrap or a clean towel and let it rest at room temperature for 12–18 hours.

2. Shape the Dough

  • After the resting time, the dough will be bubbly and sticky.

  • Lightly flour a surface and your hands, then gently shape the dough into a ball.

  • Place on a piece of parchment paper, cover loosely, and let rest for 30–40 minutes.

3. Preheat the Oven

  • While the dough rests, preheat your oven to 450°F (230°C).

  • Place a Dutch oven (or heavy pot with a lid) inside to heat for at least 30 minutes.

4. Bake the Bread

  • Carefully remove the hot Dutch oven from the oven.

  • Lift the dough (on its parchment paper) and place it inside the pot.

  • Cover with lid and bake for 30 minutes.

  • Remove the lid and bake for another 10–15 minutes, until golden brown and crusty.

5. Cool & Serve

  • Remove bread from pot and let it cool on a wire rack for at least 20 minutes before slicing.

  • Brush lightly with olive oil if desired, and sprinkle extra rosemary on top for a finishing touch.
