Apple Oatmeal Breakfast Bake (No Flour, No Sugar)

Ingredients (Serves 4–6)

  • 1 cup oatmeal (rolled oats or quick oats)

  • 2 medium apples (peeled or unpeeled, grated or finely chopped)

  • 2 large eggs

  • 150 g plain yogurt (Greek yogurt works best)

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon (optional, but highly recommended)

  • A handful of walnuts or raisins (optional, for extra crunch/sweetness)

1. Prep the Apples

  • Wash and core the apples.

  • Grate them (for a moist, cake-like texture) or finely chop them (for little apple chunks).

2. Make the Batter

  • In a bowl, combine the oats, grated apples, yogurt, eggs, baking powder, and cinnamon (if using).

  • Mix until well combined. The batter will be slightly thick.

3. Bake

  • Preheat oven to 350°F (175°C).

  • Line a small baking dish or loaf pan with parchment paper.

  • Pour the batter in and spread evenly.

  • Bake for 25–30 minutes, or until the top is golden and a toothpick comes out clean.

4. Serve

  • Let cool slightly before slicing.

  • Enjoy warm or cold, plain or with a dollop of yogurt on top.
