✅ Ingredients

  • 2 ripe avocados – halved, pitted, and sliced or mashed

  • 2–4 slices sourdough bread (or your favorite hearty bread) – toasted

  • 1 cup cherry tomatoes – halved

  • ½ cup feta cheese (crumbled, or marinated in olive oil if you have that kind)

  • ¼ cup dried cranberries – roughly chopped

  • ¼ cup walnuts – toasted and chopped

  • 1–2 tsp lemon juice – for brightness

  • Salt and freshly ground black pepper – to taste

  • Fresh herbs (optional) – parsley or basil, finely chopped

  • A drizzle of olive oil (optional, especially if using plain feta)

Step 1: Toast the Bread

  1. Toast your sourdough slices until golden and slightly crisp.

  2. Optionally, brush lightly with olive oil or rub with a cut garlic clove for extra flavor.


Step 2: Prepare the Avocado

  1. In a bowl, mash the avocado with lemon juice, salt, and pepper for a creamy base.

    • OR slice the avocado thinly if you prefer a chunkier presentation.


Step 3: Assemble the Toast

  1. Spread the mashed avocado (or arrange slices) on the toasted bread.

  2. Sprinkle generously with crumbled feta cheese.

  3. Add halved cherry tomatoes on top.

  4. Scatter chopped dried cranberries and walnuts for sweetness and crunch.


Step 4: Garnish & Serve

  1. Season with more salt and pepper if needed.

  2. Garnish with fresh herbs (parsley or basil).

  3. Drizzle with olive oil (especially if using plain feta instead of marinated).

  4. Serve immediately while the bread is warm.
