A drizzle of olive oil (optional, especially if using plain feta)
👩🍳 Instructions
Step 1: Toast the Bread
-
Toast your sourdough slices until golden and slightly crisp.
-
Optionally, brush lightly with olive oil or rub with a cut garlic clove for extra flavor.
Step 2: Prepare the Avocado
-
In a bowl, mash the avocado with lemon juice, salt, and pepper for a creamy base.
-
OR slice the avocado thinly if you prefer a chunkier presentation.
-
Step 3: Assemble the Toast
-
Spread the mashed avocado (or arrange slices) on the toasted bread.
-
Sprinkle generously with crumbled feta cheese.
-
Add halved cherry tomatoes on top.
-
Scatter chopped dried cranberries and walnuts for sweetness and crunch.
Step 4: Garnish & Serve
-
Season with more salt and pepper if needed.
-
Garnish with fresh herbs (parsley or basil).
-
Drizzle with olive oil (especially if using plain feta instead of marinated).
-
Serve immediately while the bread is warm.
🌟 Tips & Variations
-
Extra creamy → Spread a layer of hummus before adding avocado.
-
Sweet touch → Add a drizzle of honey or balsamic glaze for balance.
-
Protein boost → Top with a poached or fried egg.
-
Make it vegan → Swap feta for vegan cheese or tofu crumbles.
