Mediterranean Ground Beef Skillet

Ingredients (Serves 4)

  • 500 g ground beef

  • 1 medium zucchini, sliced

  • 1 cup cherry tomatoes, halved

  • 1 small red onion, sliced

  • 1 small yellow onion, sliced

  • 2 cloves garlic, minced

  • 100 g feta cheese, crumbled

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • 1 tsp dried oregano

  • Fresh parsley, chopped (for garnish)


👩‍🍳 Instructions

1. Cook the Beef

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.

  • Add ground beef, season lightly with salt and pepper, and cook until browned (about 6–8 minutes).

  • Drain excess fat if necessary. Remove beef from skillet and set aside.

2. Sauté the Veggies

  • In the same skillet, add the remaining 1 tbsp olive oil.

  • Sauté both onions for 3–4 minutes until soft and fragrant.

  • Add zucchini and cook for another 3–4 minutes until slightly tender.

  • Stir in garlic and cook for 1 more minute.

3. Combine Everything

  • Return the cooked ground beef to the skillet.

  • Add cherry tomatoes and sprinkle with oregano.

  • Stir everything together and cook for 3–4 minutes, just until tomatoes soften.

4. Finish & Serve

  • Remove from heat, sprinkle with crumbled feta, and garnish with fresh parsley.

  • Serve hot straight from the skillet with warm pita bread, rice, or quinoa.

  • Make it spicier → Add red chili flakes or a pinch of cayenne.

  • Swap protein → Use ground turkey, chicken, or lamb instead of beef.

  • Add more veggies → Bell peppers, spinach, or eggplant fit right in.
