Mediterranean Ground Beef Skillet

Ingredients (Serves 4)

500 g ground beef

1 medium zucchini, sliced

1 cup cherry tomatoes, halved

1 small red onion, sliced

1 small yellow onion, sliced

2 cloves garlic, minced

100 g feta cheese, crumbled

2 tbsp olive oil

Salt and pepper, to taste

1 tsp dried oregano

Fresh parsley, chopped (for garnish)

1. Cook the Beef

Heat 1 tbsp olive oil in a large skillet over medium-high heat.

Add ground beef, season lightly with salt and pepper, and cook until browned (about 6–8 minutes).

Drain excess fat if necessary. Remove beef from skillet and set aside.
2. Sauté the Veggies

In the same skillet, add the remaining 1 tbsp olive oil.

Sauté both onions for 3–4 minutes until soft and fragrant.

Add zucchini and cook for another 3–4 minutes until slightly tender.

Stir in garlic and cook for 1 more minute.
3. Combine Everything

Return the cooked ground beef to the skillet.

Add cherry tomatoes and sprinkle with oregano.

Stir everything together and cook for 3–4 minutes, just until tomatoes soften.
4. Finish & Serve

Remove from heat, sprinkle with crumbled feta, and garnish with fresh parsley.

Serve hot straight from the skillet with warm pita bread, rice, or quinoa.
